List of Arab salads

Varieties of Arabic salad: Arab salad, Fattoush, Palestinian salad, Matbucha, Tabbouleh and Raheb. Note: not all Arabic salads, there are also many types of Arabic salads).

Arab cuisine salads usually accompany any main course meal in the Arab world. Tabbouleh, a tart parsley, bulgur and tomato salads that are sautéed with eggplant and tomatoes with yogurt and spinach are quite popular. Pita, also known as "Arabic bread", and other flat breads are very common but so are leavened breads including the traditional challah and varieties of other sour dough’s. Arabic salads are not very complex and are not difficult to prepare. Most Arabic salads such as the tabbouleh are uncooked. Tabbouleh is one of the most popular salads in the Arab cuisine.

There are not many traditional Arabic salads, other than the tabbouleh another very popular salad is the Green salad, which is better known as the "Salata Khadra", this salad usually requires six cucumbers a little black ground pepper, a few tomatoes, a bundle of fresh parsley, salt and juice of one lemon. This traditional Arabic salad is one of the easiest to prepare.

Arabic food is filled with abundant salad, small plates, and a healthy layer to heavy dishes. Using vegetables and herbs, the Arabs maintained the traditions of power in daily life. Along the way, Arabs put everywhere new approaches to putting vegetables on the kitchen table.

Baba ghanoush Levant Also eggplant salad is a dish of cooked eggplant mixed with tahina, olive oil and various seasonings.[1][2] The Arabic bābā means "father", while ghannūj could be a personal name.[3] The word combination is also interpreted as "father of coquetry" or "indulged/pampered daddy."[2]
Blunkett salad Maghreb It typically consists of bread, horseradish, eggs and tuna.[4][5]
Cucumber and yogurt salad Levant Is made of salted strained yogurt (usually from sheep or goat milk) or diluted yogurt[6]
Fattoush Levant A bread salad made from toasted or fried pieces of pita bread (khubz 'arabi) combined with mixed greens and other vegetables.[7]
Ful medames salad Levant Is made of the beans and place them in a bowl with chopped tomatoes, onion, parsley, lemon juice, olive oil, pepper and salt.
Hummus salad Levant Is made of dry chickpea, soda carbonate, lemon juice, garlic, tahini, salt, olive oil, and cumin.[8]
Malfouf salad Levant Is made of cabbage, lemon juice, olive oil, garlic, salt and lots of fresh or dried mint.[9][10][11]
Masmouta salad Maghreb Is made of potatoes, carrots, peas, green gourd and beets as per choice.
Matbucha Maghreb[12] Mainly made with tomatoes, roasted peppers, oil and garlic which are cooked together.
Mechouia salad Maghreb It typically a grilled vegetables, tomatoes, peppers, onions and garlic and there are those who add eggplant.[13]

Rubiyan salad Arab world Is made of shrimp, tomato. mayonnaise, lettuce leaves, ketchup, hot sauce, mustard, lemon juice, and salt.[14][15]
Shepherd salad Levant Chopped salad of finely diced tomato and cucumber. Usually made of tomatoes, cucumbers, onions and parsley, and dressed with fresh lemon juice, olive oil and black pepper. Generally, the cucumbers are not peeled. The key is using very fresh vegetables and chopping them as finely as possible.[16]
Sweet potato salad Maghreb Is made of Sweet potato, onion, olive oil, mashed garlic, salt, ground pepper, grated ginger, black pepper, cinnamon sticks. Raisins, coriander, ground sugar and water.[17][18]
Tabbouleh Levant Finely chopped parsley, bulgur, mint, tomato, scallion, and other herbs with lemon juice, olive oil and various seasonings, generally including black pepper and sometimes cinnamon and allspice.
Ummak huriyya salad Maghreb Is made of carrots, onions, garlic, salt, spices, harissa, olive oil, lemon juice and then decorated with parsley, olives and eggs.
Wheat salad Arab world Is made of wheat, corn, tomatoes, carrots, cucumber pickles, lemon, parsley, olive oil and salt.[19]
Zaalouk Maghreb Is made of cooked aubergine and raw tomatoes.[20]
