The 1891 Cork Senior Hurling Championship was the fifth staging of the Cork Senior Hurling Championship since its establishment by the Cork County Board in 1887.
Aghabullogue were the defending champions. For the first time ever the championship was divided along divisional lines. The champion clubs of the four divisions contested the county championship.
Blackrock won the championship following a 4-4 to 0-0 defeat of Inniscarra in the final.[1] This was their third championship title and their first title in two years.
