Ooty varkey is a type of biscuit food, made out of wheat flour, rava, rice , semolina, water , ghee, sugar and salt. It can be either deep fried or baked.

History

This delicacy is has for long been equivalent with the Blue Mountains and its popularity is increasing year on year.Since the colonial rule, Ooty Varkey is famous for its Varkey. No one knows how or when it came in to existence or how it came to be called Varkey. There are various thoughts and foreigners narrate it as a delicious cookie. No one knows about its nutritional value or calories.For the Badagas of Nilgiris no occasion, cheerful or sorrowful concludes without the varkey. [1]

Efforts on GI (Geographical Indication) certification recognition

This is one of the famous production in Ooty and the tourists would prefer to take it back home.The president of Ooty Bakery Owners Association informed that if they get a GI certification it will be a boon to the bakers in Ooty. They obtain the raw materials domestically.The properties of the water and weather in Ooty gives Varkey a remarkable taste.[2]

No Animal Fat

Ooty Varkey does not contain animal fat. There are more than 90 Varkey manufacturers in Ooty and none of them use animal fat in its production is what the president of Ooty Bakery owners Association claims.[3]
