Lobby (food)
Lobby or lobbies is a traditional beef and potato stew or broth.
Background
Lobby consists of diced potatoes, diced beef, carrots, onions, beef stock, and other ingredients and seasonings. Lobby is an example of the traditional Staffordshire dishes eaten by poorly-paid potters who could not afford fresh food every day. It remains on the menus of local pubs and on locals' dinner tables today.
In Leigh, Greater Manchester, the dish earned the nickname "lobby gobblers" for the inhabitants of the town, in contrast to the "pie eaters" of neighbouring Wigan. It is believed, however, the nickname was originally coined in response to the UK miners' strike rather than for any particular culinary reasons
A similar dish to lobby can be found in Liverpool, where it is called scouse.[1]
