La tiang (Thai: ล่าเตียง) is an ancient Thai snack. It is known from the Kap He Chom Khrueang Khao Wan poem from the reign of King Rama II. It comprises shrimp, pork and peanut in mincemeat and wrapped by omelette to make a square shape.The omelette is mesh shape.[1]

Ingredients

La tiang has two parts: wrapper and mincemeat. The wrapper is omelette in mesh shape. The mincemeat is made from pork, shrimp, roasted peanuts, garlic and coriander Then season with pepper, fish sauce and coconut palm sugar.[2][3]

Preparation

To prepare the mincemeat, chop shallots, coriander root, garlic and pepper then fried. After that, add minced pork, chopped shrimp and roasted peanuts. Also season by fish sauce and coconut palm sugar. To prepare the wrapper, use fingers to dip egg and flick on the pan like a lattice until egg is well done. Lastly, wrap omelette with mincemeat to square shape.[4][5]
