East Coast Style Bagel

The East Coast Style Bagel, (sometimes beigel; Yiddish בײגל beygl), is a distinctive variety of hand stretched honey-boiled baked bagel.

Created in 2014 in Halifax, Nova Scotia, Canada, the East Coast-style bagel has qualities that compare to the New York-style bagel and Montreal-style bagel, while also uniquely incorporating sourdough. This sourdough mixture features a unique set of ingredients only found in Halifax, in the form of locally sourced wild yeasts[1][2][3][4] The East Coast-style bagel is not as chewy and fluffy, nor as salty as the New York-style bagel, and is less dense, doughy and sweet than a Montreal-style bagel.[5][6][7] The August-September issue of the Bakers Journal Magazine, which was published on August 16th, 2017, prominently featured The Bagel in an article which discussed the history and current state of affairs of bagel making. It acknowledges the East Coast Style as a pioneering hybrid of Montreal and New York styles, with an added "...dash of San Francisco influence"[8][9]

"Bagel shuffle"

A sign spinning "Bagel shuffle"[10][11] is one of the most notable and popular marketing campaign aspects used by East Coast Bakery in order to promote the city of Halifax's East Coast Bagel appellation[12][13][14][15] and received national air time the entire month of June 2017, as part of CBC's Canada's 150 documentary.[16][17]
