Balkánský sýr

Balkánský sýr (English: Balkan cheese) is a type of white brined cheese produced in Czech Republic and Slovakia. It is a salty semi-hard white cheese, analogous of the Bulgarian sirene and the Greek feta. Usually it is not matured (Czech: nezrající) and it is produced only from cow's milk.

It's mainly used as a substitute of sirene in the Bulgarian shopska salad[1] or instead of feta in greek salad.
