Spanish escabeche, from Andalusian Arabic, from Arabic اَلسِّكْبَاجَة‎ (as-sikbāja), feminine of سِكْبَاج‎ (sikbāj), from Middle Persian *sḵbʾk' (*sikbāg) (whence Persian سکبا‎ (sekbâ)). Possibly related to ceviche.
