History

The first Ed's Easy Diner was opened by Barry Margolis in London's Soho in 1987.[1] In 2008, there were just three diners, all situated in London. As of April 2014, Ed's Easy Diner had 24 outlets, and by September 2016 they had 59.[1] In October 2016, the struggling company which was hit by poor sales, and suffered from over expansion, was purchased by Boparan Restaurant Holdings, which owns Giraffe Restaurants, after it collapsed into administration.

The deal saw twenty six diners close immediately, and almost four hundred jobs lost, but saved thirty three diners and seven hundred jobs.[2] As of March 2017, the company held thirty three diners within the United Kingdom.
